Mango and Avocado Salsa Serves 4.
1 tbsp Olive Oil
1 tbsp Runny Honey
1” piece of Ginger finely chopped
1 Large Clove of Garlic chopped
1 Red Chilli chopped
1 Bunch of Spring Onions chopped
1 Large Ripe Mango chopped
1 Ripe Avocado chopped
Juice of 1 Lemon
Handful of Coriander chopped
Freshly Ground Salt and Pepper
Serve with meat or fish. I also like to serve it with Tandoori Chicken in pitta bread with shredded lettuce and yoghurt or mayonnaise.
