Pear Watercress and Blue Cheese Salad

Recipe: (serves 4)

 4 Comice Pears (peeled and sliced in half vertically)

1 Bag Watercress

4 Pieces Blue Cheese 1" by 2" approx.

   Juice of 1/2 Lemon

2 Tbsp Greek Yohurt

2 to 3 oz. Blue Cheese

2 Tbsp of Mayonnaise

1 Hundful Hazel Nuts

Method:

 

  • Toast hazelnuts in oven for 5 to 10 min. Cool and rub skins off.
  • Place in plastic bag and hit with rolling pin (take it steady or you'll end up with crumbs)!
  • Mix lemon juice, yoghurt, andblue cheese in a jar or jug and blend with a stick blender the add mayonnaise.
  • Arrange watercress on plates, place blue cheese in centre and top with pear halfs. Coat them in blue cheese dressing and sprinkle with crushed nuts.
