Smoked Salmon and Pickled Cucumber

Ingredients:

 

1 Cucumber

2 tbsp of White Balsamic Vinegar

1 tbsp of Honey

1 Packet of Smoked Salmon

Or Smoke Your Own See “Hot Smoked Salmon” Blog.

Method:

  • Put the vinegar and honey in a bowl.
  • Stir until the honey has dissolved.
  • Put the cucumber on a chopping board.
  • Take a potato peeler and slice the top of the cucumber lengthways - see photo opposite, continue to slice the cucumber into ribbons until you get to the centre where it is soft and seedy.
  • Turn the cucumber over and repeat on this side.
  • Repeat this on the third and fourth side.
  • When you have all your ribbons, take some kitchen roll and put the cucumber on this and squeeze the water out.
  • You may have to repeat this if the cucumber is very wet.
  • Stir the ribbons into the vinegar and put into the fridge to marinate for at least 1 hour.

To Serve:

Pile the ribbons on to four plates and pile the smoked salmon on top.

I like this with brown seedy bread and butter.
