Take a potato peeler and slice the top of thecucumber lengthways - see photo opposite, continue to slice the
cucumber into ribbons untilyou get to the centre where it is soft and seedy.
Turn the cucumber over and repeat on this side.
Repeat this on the third and fourth side.
When you have all your ribbons, take some kitchen roll and put the cucumber on this and squeeze the water out.
You may have to repeat this if the cucumber is very wet.
Stir the ribbons into the vinegar and put into the fridge to marinate for at least 1 hour.
To Serve:
Pile the ribbons on to four plates and pile the smoked salmon on top.
